This is the zucchini ribbon salad with toasted seeds and herbs planned to be served on the 2025 immersion retreats…
Serves 4
Main salad
2 medium zucchinis / courgettes
1/2 cup garden peas
1/2 cup peashoots
1/4 cup toasted pine nuts
1/4 cup toasted pumpkin seeds
1 tbsp toasted sunflower seeds
Juice 1 lemon
Zest 1/2 lemon
1 tbsp fresh dill
1 tbsp fresh parsley
Salt to taste
mix all ingredients into a bowl and cover generously with dressing
Dressing
2 tbsp good quality olive oil
juice 1 lemon
1 tsp white wine vinegar
salt to taste
mix all ingredients together and whisk and cover salad generously
